Best Waffles Ever

So yesterday I told y'all about my not feeling comfortable in my new town. Well, one of the things that I do when I am a little down is to bake. Waffles are not really baking but they are a great way to brighten a breakfast. So I woke up made waffles and homemade syrup, and I feel generous today so I am going share my secret to making awesome waffles and syrup!

Waffles
 
1 1/3 cups of flour
4 teaspoons of baking powder
1/2 teaspoon of salt
1 teaspoon of vanilla extract
2 teaspoons of sugar
2 large eggs (separted)
1/2 cup of coconut oil (melted)
1 3/4 cups of milk
 
 In a large bowl combine all dry ingredients by wisking gently. Mix in the egg yolks, milk and vanilla. Then add in the melted coconut oil, mix until smooth. Take the egg whites, wip until stiff. Gently fold the egg whites in to the batter. laddle into waffle maker and cook as your waffle maker instructs.
 

 
 
Normally waffle recipes ask for you to use butter instead of coconut oil, I like using the coconut oil because I think that it adds a depth of flavor and is not as fattening (Ha..yeah right). Wipping the egg whites help create a lighted texture that is tender on the inside and crispy on the outside. to make sure that your waffles stay crispy let them cool on a cooling rack. If you stack them they will get soft.
 

 
Syrup
 
1 cup sugar
1 cup water
1 Tablespoon vanilla extract
1/2 teaspoon cinamon
 
Combine sugar, water and vanilla in a small saucepan. Stir ocationally.  Cook on medium high heat for 25 to 30 min or until it covers a spoon. Stir in cinamon and pour into a serving container.
 

After all of this effort, I took my labors of love out on to our balcony and enjoyed.  I had some friends join me looking for a few bites.
